Veg Pulao

Heat ghee in a pan and add cumin seeds until they crackle. Add washed rice and sauté gently for a minute. Pour water, add salt, and cook on low flame until rice turns fluffy and aromatic. Serve hot with dal or curry.
Ingredients :
  • 1 Cup Paramounte Basmati Rice (rinsed & soaked 20 minutes)
  • 2 tbsp Oil or Ghee
  • 1 Bay Leaf
  • 4–5 Cloves
  • 1–2 Green Cardamom
  • 1 Small Cinnamon Stick
  • 1 tsp Cumin Seeds
  • 1 Medium Onion (Sliced)
  • 1 tsp Ginger-Garlic Paste
  • 1–2 Green Chilies (Slit)
  • 1 Cup Mixed Vegetables (Carrot, Peas, Beans, Potatoes)
  • 1 tsp Salt (or to Taste)
  • ¼ tsp Turmeric
  • ½ tsp Garam Masala
  • 2 Cups Water
  • Fresh Coriander for Garnish
Recipe :
  • Rinse and Soak Basmati rice for 20–30 minutes, then drain.
  • Heat ghee/oil and sauté whole spices until fragrant.
  • Add sliced onions and cook until soft and golden.
  • Mix in ginger-garlic paste and green chilies, sauté briefly.
  • Add mixed vegetables, salt, and turmeric, and sauté for 3–4 minutes.
  • Add drained rice and gently coat it with the spices.
  • Pour water, add garam masala, adjust salt, and bring to a boil.
  • Cover and cook on low heat until rice turns fluffy and water is absorbed.
  • Rest for 5 minutes, fluff gently, and garnish with fresh coriander.
