Lemon Rice

Heat oil and saute mustard seeds, curry leaves, peanuts, and chilies. Add turmeric and mix in cooked rice along with fresh lemon juice. Toss well until the rice absorbs all flavors and turns bright yellow. Serve warm for a tangy and refreshing meal.
Ingredients :
  • 2 cups cooked paramounte rice (cooled)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2–3 dried red chilies or 1 green chili
  • 8–10 curry leaves
  • ¼ tsp turmeric powder
  • 2–3 tbsp lemon juice (fresh)
  • 2–3 tbsp roasted peanuts or cashews
  • Salt to taste
  • Fresh coriander (optional)
Recipe :
  • Cook rice and let it cool completely so the grains stay separate.
  • Heat oil in a pan and add mustard seeds until they begin to splutter.
  • Add urad dal, chana dal, and sauté until they turn light golden.
  • Add dried red chilies or green chili along with curry leaves and sauté briefly.
  • Mix in turmeric powder and stir quickly to blend with the tempering.
  • Add the cooled cooked rice and gently toss to coat it evenly.
  • Turn off the heat and add fresh lemon juice and salt, mixing gently.
  • Add roasted peanuts and garnish with coriander if desired.
